I’m a very unskilled, simple-minded cook. I like to make a salad with a lot of edamame, a little onion and tomato, coriander, lemon juice, olive oil, salt, and pepper, and maybe a crumbled slice of heavily toasted bread. Recently, I augmented this with some red lettuce. A plateful is a pretty good light meal.

For edamame? Mostly I just steam them and salt the pods, and slurp them out. Easy and filling. Your idea sounds good too, though.
