What are the best ways of using leftover coconut milk

OMG this thread is JUST IN TIME! I was thinking of having a coconut milk phase, since it was so amazing in this soup I made the other week.

how much do you have left over? if it’s only part of a can, i’d use it for a smoothie. blend with ripe avocado and some banana and perhaps a bit of honey and enjoy (and try not to think about the fat/calories).

It’s a can and a half, I think. Thanks for the idea, and no I will not think about the fat, only the goodness.

that’s enough to make a thai-style curry, then. get a little tin of paste (red, green, massaman, etc) and follow the directions. or, you could get some plain canned pumpkin and mix it with the coconut milk and some broth and sauteed onion and some spices (salt, pepper, chilis) and puree the whole thing. voila—spicy pumpkin soup.

Or! Sautee garlic & onion until lightly translucent, then add chicken broth plus Yukon Gold potatoes (peeled and cubed) plus a can of coconut milk plus corn and shrimp. Season with cilantro and red pepper flakes and s/p. Simmer gently for about 15–20 minutes, I think? Until potatoes aren’t hard in the middle. Add cleaned shrimp at the very end and leave pot on the heat only until shrimp turn pink and white.

I might be forgetting some kind of seasoning, that seems thin...anyway season as you like.

I have always wanted to try (but never really worked up the balls, I guess) a coconut milk tropical version of a White Russian. Maybe substitue Malibu rum for the vodka. But then, I enjoy my body’s continued proper functioning, so this may have to remain merely a theoretical libation.

The spellchecker used to be an extension, but I think with 2.0 is it part of the furniture.
