pot roast, complete with dried onion soup mix sprinkled over it.

Two pb&j sandwiches (semi-snobbish as made with natural pb and homemade jam) and several cups of tea (I have a cold and am craving tea.

Actually, I'm craving tuna fish sandwiches, tea, and big bowl of chicken Pho. But not all at once.

at the weekend i attempted egg fried rice, after a second attempt it was fine although the recipe i read off asked for soy sauce which i forgot. lacked some flavour but the texture and everything else was blob on.

I found a recipe that gets pretty darn close to the chicken curry soup they make at Pho Saigon in Memphis. Yum yummy.

I made a steak pie last night. Mmmmm. Chicken casserole in the oven right now for tomorrow. Also made some parsnip, leek and apple soup. I love it when it's cold and wintry outside and I'm too poor to go out because I cook much more food, and nice old-fashioned comfort food at that.

tonight it's salmon with cilantro pesto.

leftover pot roast ----> open-faced beef sandwiches with gravy

I need to go to the store!

Carrying on the wintry comfort food upthread, I'm currently cooking up some lamb mince for a shepherd's pie for tomorrow. Tonight is going to be something snacky since we ate shitloads of food at a post-christening buffet this afternoon (we were going to have the shepherd's pie tonight but WAY too full for hearty food). I'm thinking brie and cranberry toasted sandwiches - I have a ton of cranberries in the freezer so might make some cranberry sauce - cook cranberries and brown sugar and port and cointreau until gooey. Yum. Absolutely gorgeous with melted brie.

Mmmm, seafood roadshow...

Big pot of jambalaya with Aidell's andouille sausage cooking up tonight so I'll have leftovers for lunches/dinners during the week. Smells so good!

jaq (jaq), Monday, 4 December 2006 00:35 (seventeen years ago) link

Stewed a chicken with the usual veg, put half the pulled chix and broth into soup and froze all the rest (broth in ice cube tray). Resulting soup included chicken, shrimp, Yukon gold pot, corn, coconut milk, garlic, and cumin. I left out the cilantro because it is gross. The final product is DIVINE and I'm having it for lunch today.

Laurel (Laurel), Monday, 4 December 2006 15:27 (seventeen years ago) link

I've been baking apples with mincemeat where the core used to be for about the last five nights. I ran out of the homemade ice-cream on Saturday and have been burning my tongue since.

moroccan-style chicken with prunes and spinach with raisins and pine nuts. i love spinach - so versatile.

Nothing lately because I've been up to my eyeballs in magazine production cycle, but I should be done by Tuesday or Wednesday and I'm itching to get in the kitchen. What do y'all recommend I make?

I Am Curious (George) (Slight Return) (Rock Hardy), Saturday, 9 December 2006 04:11 (seventeen years ago) link

Me too! (not cooking, that is, not producing magazines...) I can't wait to get home to all the delivered produce that is filling up the fridge. What to do with purple kale? What about a single leek? There are also yukon gold taters. And butternut squash. Soup?

jaq (jaq), Saturday, 9 December 2006 05:27 (seventeen years ago) link

I saw Alton Brown's winter squash episode recently and got interested in the soup and (especially) dumpling recipes.

I Am Curious (George) (Slight Return) (Rock Hardy), Saturday, 9 December 2006 14:29 (seventeen years ago) link

Sauté up the single leek as if it were an onion.

Kale: tear it into chip-sized pieces, put a little olive oil and maybe some parmesan on it, and put it in the oven at, what is it, 425? for a few minutes, until it becomes a crispy snack (30 mins or so?).

Or, if in a rush, soup it all.

Casuistry (casuistry), Saturday, 9 December 2006 17:22 (seventeen years ago) link

One apple pie cooling right now! The dough for the second one still has to be rolled out but I R TIRED. I wonder if we can wait the 30 mins to cut into this one....

Laurel (Laurel), Sunday, 10 December 2006 21:12 (seventeen years ago) link

Home at last! Dinner tonight: 1/2 lb fresh ground pork browned with a 1/2 tsp of this chinese "oil chili" sauce (oil, crushed chilis, salt, whole peanuts). When partly cooked, I tossed in the remaining stems of the fennel (still have the main bulb left and some frondy bits) and let that go for a few minutes, then threw in a small head of cabbage, sliced into 1/2" strips. Steamed it with the pan covered for about 10 minutes, tossed it about and finished it over medium heat until some of the cabbage browned a bit on the edges. Pretty good, fairly quick, and made with stuff we had in the house.

jaq (jaq), Monday, 11 December 2006 06:13 (seventeen years ago) link

btw - mmmmmmmm, pie!

jaq (jaq), Monday, 11 December 2006 06:13 (seventeen years ago) link

I like kale done in boiling water for about 4 minutes, then doused liberally with gravy. All cabbagey things are good with onion, even just putting some chopped onion in the water you're boiling it with. Also, cabbagey things are good with caraway.

Madchen (Madchen), Monday, 11 December 2006 13:43 (seventeen years ago) link

Top crust of pie perfect, started flaking as soon as I cut into it. Apples still a bit crunchy tho and I'd have liked them softer so my instructions say to bake at 375 for 50 mins but I lowered and lengthened that for the second one -- haven't cut into it yet but I'll find out whether that was a good idea! Also, apples very wet -- I used Ida Reds and Northern Spies and Cameos and Sunbrights from the farmers' market. Hmm.

Laurel (Laurel), Monday, 11 December 2006 15:03 (seventeen years ago) link

Didn't want to leave the house today. For lunch, I made a potato-leek soup. Just simmered some chopped russets and our sole leek in some of the concentrated chicken broth I made a few weeks ago with some additional bay leaves. Zoomed part of it with the magical immersion blender, dolloped in unhealthy amounts of butter and heavy cream. Served steaming with a grind of black pepper and a grating of parmesan over the top.

What is a Sunbright apple, Laurel? Such a cheerful name. Do you know if they are an old heritage kind, or a new cross?

jaq (jaq), Monday, 11 December 2006 23:44 (seventeen years ago) link

I've never had leek & potato soup but it sounds very nice -- see also garlic soup, another liquid savory!

It might have been...suncrisp? It was sun-SOMETHING, that's all I remember, and now I can't find very many sun-anythings in online listings.

Laurel (Laurel), Monday, 11 December 2006 23:59 (seventeen years ago) link

Ooo, I found a few listings for suncrisp, sounds nice. Also, looks like it prefers to grow over there in the east, so will probably be rare out this way.

Tonight I am jazzing up the leftover potato-leek potage with some crispy bacon and garlic and crushed red chilis.

jaq (jaq), Wednesday, 13 December 2006 01:19 (seventeen years ago) link

I sent Mr. Jaq out provisioning and asked him to bring back some acorn squash. He brought back turban squash, because they looked like acorns to him. Chopped in half, seeds scooped out, filled centers with butter, tsp. brown sugar, handful of dried cranberries, sprinkle of cinnamon. Baked at 350 F for an hour. There wasn't as much edible flesh on these as with an acorn, and they were a bit drier, but otherwise very tasty.

btw, bacon/garlic/chili/potato/leek/butter/cream soup = OMGYUM!

After lows in the teens last week, good weather snuck up on me and today is sunny and 65 degrees. TIME TO GRILL A STEAK. The coals are almost ready.

I Am Curious (George) (Slight Return) (Rock Hardy), Wednesday, 13 December 2006 22:02 (seventeen years ago) link

Staring into the fridge last night, nothing but leftovers and wilting organic produce stared back. I cubed beets, carrots, parsnip, rutabegas, tossed with olive oil and zatar, then roasted covered for 75 minutes at 350 F. It looks incredibly festive. Chopped up approx. 4 oz leftover roast pork, julienned 1/2 a jar of sundried tomatoes in olive oil, coarsely chopped 3 cloves garlic, sauted in cast iron skillet for 10 minutes. Added 1/2 cup jellied pork stock and 8 oz. leftover bowtie pasta with a smidge of mushroom fennel tomato garlic sauce and simmered for 10 minutes more until everything was good and hot. Not bad.

I've been ridiculously sick, so skipped the family xmas eve dinner in upscale restaurant experience yesterday. This morning, I coached Mr. Jaq through the baking of a cream coffeecake (which turned out perfectly), then drove the cat totally mad by roasting a duck this evening. We really need to catch his grovelling, plaintive meowing, and pitiful "I'm-so-weak-I-must-have-duck" casting himself to the floor theatrics on video.

jaq (jaq), Tuesday, 26 December 2006 04:17 (seventeen years ago) link

duck yesterday, stuffed with prunes and apples.

My first gravlax went into the fridge* 90 minutes ago. Hopefully in 2-3 days I'll have good news.

*The extra fridge! We bought a new fridge for Christmas and put the old one out in my old office for drinks, less-often used condiments/marinades, and special projects like this one.

Kiddo goes back to school on Thursday and has requested a meatloaf before she goes. Yes, my meatloaf is that good. So tonight is that plus garlic mashed taters.

I'm about to just make a big messy improvised Italian stewy chicken dish - I usually just combine browned chicken thigh pieces with a mixture of fresh and pureed tomatoes, peppers, onions, basil, garlic, olive oil, maybe some other spices, and whatever I feel like throwing in (perhaps some olives tonight), and just let it simmer. Good with rice or pasta.

Not For Use as Infant Nog (A-Ron Hubbard), Saturday, 30 December 2006 23:49 (seventeen years ago) link

For NYE dinner: beef and mushrooms braised in red wine with bay, thyme, celery seed, ginger, garlic, juniper berries, peppercorns. It was the wrong cut of beef (top round, too lean), but tasted and smelled great. Broccoli sauteed in browned butter with a squeeze of lime. Mixed apple/cranberry crisp with heavy cream for dessert.

jaq (jaq), Tuesday, 2 January 2007 18:37 (seventeen years ago) link

I want to make that chicken stewy thing! With potatoes, to get all the ingredients into one dish.
