Yes, the sugar in an ear of corn starts to turn to starch almost immediately after it's picked from the stalk. Keeping it iced until used helps to preserve that fantastic flavor.

I heart corn on the cob. I cook it in gently simmering water to which I have added half a teaspoon of sugar and a sprinkling of rock salt, then eat it with lashings of butter.

When my brother and I were little kids, we used to have corn on the cob eating competitions in which we would see who could finish theirs first, but we had to pretend they were typewriters, eating it one row at a time and making a "ding" noise and shouting "carriage return" before starting the next row.
