Cookery DVD's/online videos, any you can recommend ?

I've only really just started to get my hands busy in the kitchen, after a lifetime of take-away food. And so I'm relying on cookbooks and the occasional internet recipe to get me going.

But I really need to see somebody else cooking the recipes I want to make, before I feel confident in trying myself.

I'd normally just browse amazons DVD selection but I'd appreciate your recommendations if you have any. I'm particularly interested in spanish cooking, and if possible chinese recipes.

Or are there any on the internet i can watch?

I love watching Alton Brown because he explains why you do things, but I don't know if he has done any shows focusing on the recipes of specific regions. Could you find a local class? I took a one day Thai cooking class on a Saturday from the woman who owned our favorite Thai place, which was fun and tasty.
