3 tb Grated Parmesan cheese

1/8 t Pepper
2 pk Refrigerated crescent roll
-dough (8 oz)

Heat oven to 375'F. In skillet, cook bacon and onion until bacon is
crisp; drain. Stir in remaining ingredients except crescent roll
dough. Separate each package of crescent dough into 8 triangles.
Spread top half of each triangle with SPAM mixture; roll up. Place on
baking sheets. Bake 12-15 minutes or until golden brown.

SPAM FAJITAS

Vegetable cooking spray
1 Green bell pepper, cut into
-julienne strips
1/2 Onion, cut into 1/4" slices
1 cn SPAM Luncheon Meat, cut into
-julienne strips (12 oz)
3/4 c CHI-CHI's Salsa
8 Flour tortillas, warmed (8")
2 c Shredded lettuce
1/2 c Shredded hot pepper Monterey
-Jack or Cheddar cheese
1/2 c Nonfat plain yogurt
Extra salsa, if desired

Spray large non-stick skillet with vegetable cooking spray. Heat
skillet over medium-high heat. Saute green pepper and onion 2
minutes. Add SPAM. Saute 2 minutes. Stir in salsa and heat
thoroughly. Spoon about 1/2 cup SPAM mixture into each flour
tortilla. Top each with 1/2 cup shredded lettuce, 1 tablespoon
shredded cheese, 1 tablespoon yogurt, and extra salsa, if desired.

SPAM VEGETABLE STRUDEL

1 pk Long-grain and wild rice
-mix (6.25 oz)
1/2 c Chopped carrot
1/2 c Chopped red bell pepper
1/4 c Orange juice
1 cn SPAM Luncheon Meat, cut in
-thin strips (12 oz)
2 c Chopped mushrooms
1/4 c Sliced green onions
1 tb Dijon-style mustard
1/2 ts Basil
1/4 ts Pepper
6 Sheets frozen phyllo pastry,
-thawed
Butter-flavor vegetable
-cooking spray
1 tb Dry bread crumbs
Soy sauce

Heat oven to 375'F. Prepare rice according to package directions. In
small saucepan, combine carrots, red pepper, and orange juice. Bring
to a boil. Cover and cook 5-7 minutes or until crisp-tender. Drain
well. Place in medium bowl. In large skillet, saute SPAM, mushrooms,
and green onion until tender. Add SPAM mixture, rice, mustard, basil,
and pepper to vegetable mixture; stir well. Place 1 sheet phyllo
pastry on a damp towel (keep remaining phyllo covered). Lightly coat
phyllo with cooking spray. Layer remaining 5 sheets phyllo pastry on
first sheet, lightly coating each sheet with cooking spray. Spoon
SPAM mixture lengthwise down center of phyllo stack, leaving a 1/2"
border. Roll phyllo jelly-roll style, starting with long side
containing SPAM mixture. Tuck ends under; place diagonally, seam side
down, on baking sheet coated with cooking spray. Lightly coat top of
pastry with cooking spray and sprinkle with bread crumbs. Make 12
(1/4" deep) diagonal slits across top of pastry using a sharp knife.
Bake 20 minutes or until golden. Serve with soy sauce.

Vegetable cooking spray
1 pk Elbow macaroni (7 oz)
2 c Frozen cut broccoli, thawed
-and drained
1 cn SPAM Luncheon Meat, cubed
-(12 oz)
1/2 c Chopped red bell pepper
2 c Skim milk
2 tb Cornstarch
1/4 t Pepper
1 c Shredded fat-free Cheddar cheese
3/4 c Soft bread crumbs
2 t Margarine, melted

Heat oven to 350'F. Spray 2-casserole with vegetable cooking spray.
Cook macaroni according to package directions; drain. In casserole,
combine macaroni, broccoli, SPAM, and red pepper. In small saucepan,
stir together milk, cornstarch, and pepper until cornstarch is
dissolved. Bring to a boil, stirring constantly, until thickened.
Reduce heat to low. Add cheese; stir until melted. Stir sauce into
SPAM mixture. combine bread crumbs and margarine; sprinkle on top of
casserole. Bake 40 minutes or until thoroughly heated.

BURRITOS!!!



SPAM BREAKFAST BURRITOS

Amount Measure Ingredient -- Preparation Method

1 cn SPAM Luncheon Meat, cubed (12 oz)
4 Eggs
2 tb Milk
1 tb Butter or margarine
6 Flour tortillas (6")
1 c Shredded Cheddar cheese, divided
1 c Shredded Monterey Jack cheese, divided
CHI-CHI's Salsa to Taco Sauce

Heat oven to 400'F. In bowl, beat together SPAM, eggs,
and milk. Melt butter in large skillet; add egg
mixture. Cook, stirring, to desired doneness. Fill
each tortilla with SPAM mixture and half of cheeses.
Roll burrito; place seam side down on 12x8" baking
dish. Sprinkle remaining cheese over top of burritos.
Bake 5-10 minutes of until cheese is melted. Serve
with salsa.

SPICY SPAM KABOBS

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 c Lemon juice
3 tb Minced onion
1 tb Olive oil
1 t Dried leaf thyme
1 Garlic clove, minced
1/2 t Whole oregano leaves
1/4 t Red pepper flakes
16 Pea pods
1 cn Pineapple chunks packed in light juice, drained (8 oz)
1 cn SPAM Luncheon Meat, cut into 24 cubes (12 oz)
1 Red bell pepper, cut into 1" pieces
4 c Hot cooked rice

Combine first 7 ingredients in 9x12" dish. Wrap pea pods around
pineapple chunks. Alternately thread SPAM cubes, pineapple chunks,
and bell pepper pieces on eight skewers. Place in dish with marinade.
Cover and marinade 2 hours, turning occasionally. Grill kabobs over
medium-hot coals 10 minutes, turning occasionally. Or, broil 5" from
heat source 8-10 minutes, turning occasionally. Serve with hot cooked
rice.

1.00 pk Frozen hashbrown potatoes, thawed slightly (32 oz)
0.50 c Butter or margarine, melted
1.00 t Salt
1.00 t Pepper
0.50 t Garlic powder
2.00 c Shredded Cheddar cheese
1.00 cn SPAM Luncheon Meat, cubed (12 oz)
1.00 cn Cream of chicken soup (10 3/4 oz)
1.50 c Sour cream
0.50 c Milk
0.50 c Chopped onion
0.25 c CHI-CHI's Diced Green Chilies, drained
2.00 c Crushed potato chips

Heat oven to 350'F. In large bowl, combine potatoes, melted butter,
salt, pepper, and garlic powder. In another bowl, combine cheese,
SPAM, soup, sour cream, milk, onion, and green chilies. Add SPAM
mixture to potato mixture; mix well. Pour into 2-quart baking dish.
Sprinkle with potato chips. Bake 45-60 minutes or until thoroughly
heated.

1 pk Frozen french fry potatoes, thawed (20 oz)
2 c Shredded Cheddar cheese
2 c Sour cream
1 cn Condensed cream of chicken soup (10 3/4 oz)
1 cn SPAM Luncheon Meat, cubed (12 oz)
1/2 c Chopped red bell pepper
1/2 c Chopped green onion
1/2 c Finely crushed corn flakes

Heat oven to 350'F. In large bowl, combine potatoes, cheese, sour
cream, and soup. Stir in SPAM, bell pepper, and green onion. Spoon
into 13x9" baking dish. Sprinkle with crushed flakes. Bake 30-40
minutes or until thoroughly heated.

Note how we dispense with time wasting niceties like peeling and cutting fresh potatoes.

Heat oven to 425'F. Bake pie shell 6-8 minutes. Reduce oven
temperature to 350'F. In bowl, beat together eggs, whipping cream,
and pepper. Stir in SPAM and onion. Sprinkle 1 cup cheese in pie
shell. Pour egg mixture over cheese. Sprinkle remaining cheese over
egg. Bake 45-55 minutes or until eggs are set.

1 Swiss Roll, Victoria Sponge or Trifle Sponges
1 packet spam
Strawberries or Raspberry (tinned, frozen or fresh)
600ml (1 pint) Home-Made Custard, cooled
150ml (¼ pint) Cream Sherry
Strawberry or Raspberry Jam
Toasted Flaked Almonds

Slice the swiss roll, (if using victoria or trifle sponges, spread with a little jam).
Arrange in the bottom of a glass serving bowl.
Pour the sherry over the swiss roll or sponges.
Add the fruit.
Prepare the spam as per the instructions
Pour the spam over the fruit and sponge.
Place in the refridgerator and allow to set.
Pour custard over spam.
Whisk the cream and spread or pipe on the top of the custard.
Decorate with almonds.

Your homemade custard and fresh fruit won't cut any mustard with the pre-processed-frozen SPAM recipe police, but apart from that you recipe looks spot on. I'd maybe offer hundreds&thousands as an alternative to the almonds.

Cajun Coconut SPAM™ Fritters

Servings: 32
Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients
- 1 SPAM® Classic (12-ounce)
- 1 1/2 cups complete pancake mix
- 2 teaspoons Cajun seasoning
- 1 cup milk
- 1 1/2 cups shredded coconut
- Sweet & sour sauce for dipping


Directions
Preheat oven to 375ºF. Cut SPAM® into 32 spears. Place wooden toothpick lengthwise into each spear. In bowl, combine pancake mix and cajun seasoning, gradually add milk, stirring until smooth. Dip each spear into batter, roll in coconut until lightly coated. Place on lightly sprayed baking sheet. Bake for 10-13 minutes, turning halfway through baking, until golden brown and batter is cooked through. Serve warm fritters with sweet & sour sauce on the side for dipping. Makes 32 appetizer servings.
